Rules and regulations of production of the controlled origin denomination of Montefalco wines (Official Gazette no. 189 of the 13th of August 1993)
The controlled origin denomination Montefalco, obligatorily followed by Bianco or Rosso, is reserved for the wines made from the grapes of the vines on the farm which have the following ampelographic composition:
Montefalco Bianco: Grechetto no less than 50%, Tuscan Trebbiano from 20 to 35%, other non aromatised white grapes, recommended or authorised for the province of Perugia, by themselves or mixed, for the remaining part.
Montefalco Rosso: Sangiovese from 60 to 70%, Sagrantino 10 to 15%, other non aromatised red grapes, recommended or authorised for the province of Perugia, by themselves or mixed, for the remaining part.
Grapes intended for the production of Doc Montefalco wine must be produced in the administrative territories of the municipality of Montefalco and part of the territory of the municipalities of Bevagna, Gualdo Cattaneo, Castel Ritaldi and Giano dell’Umbria. For Montefalco Bianco the maximum yield of grapes must not exceed 130 quintals per hectare of vines allotted for such cultivation. For Montefalco Rosso the maximum yield of grapes must not exceed 130 quintals per hectare of vines allotted for such cultivation. The maximum yield of wine from the grapes must not exceed 72% for Montefalco Bianco and 70% for Montefalco Rosso. Grapes intended for fermentation must ensure the Montefalco Bianco has a minimum natural alcohol content of 10.5% and the Montefalco Rosso of 11.5% and the Montefalco Rosso Riserva of 12%. Controlled origin denomination Montefalco Rosso wine can only be put on the market after a compulsory period of ageing of at least 18 months running from the 1st of November of the year of production of the grapes. Controlled origin denomination Montefalco Rosso Riserva wine must undergo a compulsory period of ageing of at least 30 months, twelve of which in wooden barrels, running from the 1st of November of the year of production of the grapes.
The wines with Montefalco denomination origin, at the time of being put on the market, must have the following characteristics:
Montefalco Bianco:
Colour: straw yellow
Aroma: slightly heady, fruity
Flavour: dry, slightly fruity, characteristic;
Minimum total volume of alcohol: 11%
Minimum total acidity: 5.5 per thousand
Minimum net dry extract: 17 per thousand
Montefalco Rosso:
Colour: ruby red
Aroma: characteristic, heady, delicate
Flavour: harmonious, dry with perfect body ;
Minimum total volume of alcohol: 12%
Minimum total acidity: 5 per thousand
Minimum net dry extract: 23 per thousand
The controlled origin denomination Montefalco Rosso Riserva wine, made from grapes with a minimum natural alcohol content of 12%, at the moment of being put on the market must have a minimum total alcohol content of 12.5%.
